Tuna Salad

Delicious tuna salad, perfect for any time of the day!

Ingredients:

  • 1 large can of tuna in oil

  • Half a bunch of coriander

  • Handful of black pitted olives

  • Handful of sliced jalapeños in brine

  • Handful of cornichons

  • 2 tbsp capers

  • Juice from half a lemon

  • 1 tbsp green pesto

  • 3 tbsp mayonaise



Method:

Remove the oil from the tuna and add to bowl.

Finely chop all of the ingredients and add to bowl.

Add a splash of the brine from the olives, jalapeños and cornichons.

Add the mayonnaise, pesto, lemon juice and a pinch of salt and pepper.

Combine well.
