Mutti's Noodle salad

Ingredients:
500g cooked Spaghetti
200g Mayonnaise, preferably homemade
4 large tomatoes, diced
190g Pimento stuffed green olives in brine, drained weight, slice the olives, keep the brine
120g grated Parmesan cheese
Method:
Refresh the cooked spaghetti in cold water and drain. Chop them into matchstick size and put in a larger mixing bowl.
Add the brine to the sticky spaghetti to loosen them then add the diced tomatoes, mayonnaise and sliced olives.
Mix altogether and then add the grated parmesan. Mix well.
If needed add more brine or parmesan.
Taste with salt and lots of pepper and serve chilled.
Perfect accompaniment to your summer barbecues.
