Tagliatelle al Limone

Fresh Tagliatelle with a creamy lemon sauce.

for 4

Ingredients:

  • Fresh Tagliatelle (Waitrose)

  • 300ml double cream

  • 120g unsalted butter, softened

  • zest and joule of 4 large organic lemons

  • chopped fresh flat-leaf parsley

  • 150g parmesan, freshly grated

Method:

  1. Heat the cream in a saucepan. When warm, add the soft butter, lemon juice and zest. Stir briefly together until the bitter is completely melted, then remove from the heat.

  2. Cook the tagliatelle in salt water. Drain and then stir into the warm cream. Season with salt and pepper. Add the parsley and serve with Parmesan.
