Quinoa salad with peppers and dates

Ingredients:
250g quinoa, cooked
1/2 red pepper, finely diced
1/2 green pepper, finely diced
1-2 dates, finely chopped
1/4 apple (Granny Smith), finely diced
1 fennel, shaved on a mandolin
fresh juice of lime
200g greek yoghurt
1/2 shallot, finely grated
salt and pepper
extra virgin olive oil
Method:
Mix the quinoa, peppers, dates and apple in a big bowl. Add half a lime juice and a little olive oil, salt and pepper. Mix well. Then mix the fennel shavings with some lime juice and vey little olive oil. Salt and pepper. For the yoghurt dressing mix the yoghurt with the grated shallot, salt and pepper.
For the assembling start with a tablespoon of the yoghurt dressing spread across the bottom of your bowl. The salad should sit on half of the dressing. The rest of the dressing goes on top of the quinoa salad. Crown it then with the fennel salad. It is essential for this recipe that peppers and apple are diced as finely as you can. And salad should be served chilled.
