Orzo Pasta with Tarragon and cream

A creamy pasta accompaniment to fish or chicken

Ingredients:

  • 250g orzo Pasta

  • 50g Butter

  • 2 shallots, finely chopped

  • 1 garlic clove, finely chopped

  • 50g button mushrooms, sliced

  • 150ml white wine

  • 250ml chicken stock

  • 200ml double cream

  • 2tsp Dijon mustard

  • 2tsp tarragon (picked leaves)


Method:

Boil the orzo pasta for 10 minutes until cooked. Strain and refresh with cold water. Add some oil and mix well. Keep to one side

For the sauce melt the butter and add shallots and garlic. Sweat for 5 minutes the add mushrooms and cook another 2 minutes. Add the white wine and reduce by two-thirds. Add the chicken stock and reduce by half. Add the creamed reduce further to coating consistency. Add the mustard and tarragon leaves, stir well.
