Seville orange marmalade

A delicious bitter sweet orange marmalade

Ingredients:

  • Seville oranges, washed

  • caster sugar


Method:

  1. Soak the oranges for 24 hours in cold water to soften the skin. Drain.

  2. Slowly boil the oranges in water, lid askew for 3-4 hours, gentle simmer. Add some water if too much evaporates. Let cool

  3. Take the oranges out and cut in half and remove the seeds and tough fibres with your fingers. Roughly cut the flesh. Cut half of the oranges' skin into narrow strips. Weigh flesh and skin and return to saucepan.

  4. Measure out two-thirds of the pulp in caster sugar. Add the sugar to the saucepan and gently bring to boil. Stir and turndown heated simmer to a nice consistency. 30mins to one hour. Cool for 5 mins and then spoon into sterilised jars.
