Guacamole

The oaxacan way

Ingredients:

  • 1 large avocado

  • 1/2 juice of a lime

  • stems of one bundle of coriander, finely chopped

  • 1 jalapeño, finely chopped, seeds removed

  • salt

  • pepper

  • a few coriander leaves

Method:

With a fork mash the avocado, add the lime juice. In a mortar and pestle crush and grind stems and jalapeño to a paste.

Add this paste to the mashed avocado and taste with salt and pepper. Garnish with fresh coriander leaves.
