Chai Pudding with mango and pomegranate

Ingredients:

40g Chia seeds

150ml water

40ml Apple juice

220g Coconut Yoghurt

Fresh mango

Pomegranate seeds

Any other toppings you fancy such as fruit, nuts or chocolate


Method:

Mix the chia seeds with water and apple juice and keep in the fridge for at least 4 hours (or overnight).

The seeds will swell and turn gelatinous.

Mix the mixture with the yoghurt and combine thoroughly.

Top with diced mango and pomegranate.
