Turkey Meatballs

Light and packed with flavour

for 4
Ingredients:
100g frozen sweet corn kernels
3 slices of stale white bread
500g minced turkey breast
1 egg
4 spring onions, finely chopped
10g parsley, finely chopped
2 1/2 tsp ground cumin
1 garlic clove, crushed
sunflower oil for frying
salt and pepper
Method:
Fry the corn kernels in a non-stick frying pan over high heat until blackened. Remove and leave to cool.
Soak the bread in cold water for a minute, then squeeze well and crumble into a large bowl. Add the rest of the ingredients to the bowl and mix well with your hands. Form small burgers and fry them in a large pan in sunflower oil until golden. Be careful not to overcook, so they don't get to dry. If they are too large finish them off in the oven at 220 degrees for 5 minutes. Serve them warm or cold.
