Sprouting broccoli with ricotta and orzo

Ingredients:
400g sprouting broccoli
80g orzo pasta
1 garlic clove, thinly sliced
2 tbsp extra virgin olive oil
tarragon leaves, roughly chopped
Juice and finely grated zest of 1 lemon
1 small, mild red chilli, finely chopped
60 - 80g ricotta
sea salt and freshly ground pepper
Method:
Boil the orzo in salted water as per instructions, you will add the broccoli at a later stage, so you will need a big pot of water.
Add the broccoli to the pasta pot after 6 minutes. Cook the broccoli 3-4 minutes, add the garlic slices 1 minute before draining the orzo and broccoli. Refresh pasta and orzo with cold water. Drain well.
Add the oil, tarragon, lemon zest and juice, chilli, lots of black pepper and a good pinch of salt.
Gently toss so that the pasta and broccoli is well coated, check for seasoning.
Present in a large bowl or serving dish, dot teaspoons of a creamy ricotta in and around the broccoli and allow it to melt just a little before serving.
