Morty-d, Mozz & Pistachio Pasta Salad

Ingredients:
500g dried Rigatoni
225g sliced mortadella
270g Castelvetrano olives
350g fresh buffalo mozzarella or burrata, bite size pieces
35g Parmesan, grated
100g roasted pistachios, roughly chopped
2 lemons, juiced
1 garlic clove, grated
160ml extra virgin olive oil
25g basil leaves
salt and fresh pepper
Instructions:
Cook the rigatoni as per instructions. Rinse in cold water and get rid of the remaining starch.
In a big bowl add the pitted and halved olives. Add lemon zest of one lemon and the lemon juice and the grated garlic. Stir in the olive oil. Add the sliced mortadella. With your hands rip the mozzarella into bite- sizes pieces and add to the bowl. Add the grated parmesan.
Stir all together and salt and pepper to taste.
Then add the pasta together with the torn basil and pistachios.
Again adjust taste with salt and fresh pepper.
