Granola with seeds and nuts

makes about 1 kg


Ingredients:


400g jumbo oats

70g sunflower seeds

70g flaked almonds

50g pumpkin seeds

50g roughly chopped hazelnuts

40g walnuts

60g coconut chips

90g coconut oil

160ml maple syrup

grated zest of 1 orange, plus juice of half an orange

4 teaspoons ground cinnamon

1 vanilla pod, scraped out


Method:


Preheat the oven to 160 degrees C (fan 140 C) Line a large baking tray with baking parchment.

Heat the coconut oil and maple syrup over low heat until melted. Remove from heat and add the orange juice, cinnamon and vanilla seeds.

Mix all the dry ingredients, except the coconut chips, in a big bowl and pour in the oil syrup mixture. Mix well. Best is to use a plastic glove and mix with one hand.

Spread the mixture evenly on your baking tray and bake for 45 mins, stirring every 5 mins, until golden brown. Add the coconut chips for the last 10 minutes.

Remove the tray from the oven and leave to cool completely. Now you could mix in raisins or dried fruit if you wish. Store the granola in an airtight container, it will stay fresh for a few weeks.
