Easy Tiramisu

Ingredients :


250 ml whipping cream

4 egg yolks

70g caster sugar

400g mascarpone cheese

400ml hot espresso coffee

2 tablespoon Amaretto

30 sponge lady fingers

cocoa powder (unsweetened) for dusting


Method :


Whip the cream using electric hand mixer or whisk. Do not over whisk, which is when it turns grainy. Aim for soft peak.

In a separate mixing bowl whisk the egg yolks with the sugar until pale in colour and volume doubles. Then add the mascarpone and whisk until smooth. Now, fold in the whipped cream You should have a nice pale yellow

mixture.

Mix the coffee with the Amaretto.

Now start assembling and lay out one layer of sponge fingers in your serving dish.

With a spoon drench them all one by one in coffee/Amaretto mix. They should be soaking wet. Cover with a thick layer of the cream. Repeat the process once more. Your last layer should always be cream.

Cover with cling film and store overnight in the fridge. Before serving, cover the whole serving dish with the cocoa powder by using a fine sieve.
