Chicken with lemon

Ingredients:
1 large organic chicken, trimmed of all the fat.
1 large organic unwaxed lemon
1 bunch thyme
1 cup white wine
salt and pepper
Method:
Preheat the oven to 180 degrees.
Wash the chicken and pat dry with a kitchen towel. Add salt and pepper to the cavity and outside. Put the pierced lemon inside the cavity together with the bunch of thyme. Lay on the baking tray breast side down first and after half an hour in the oven turn over. Add the white wine to the bottom of the tray before putting the chicken in the oven. After one hour remove the chicken from oven and let it rest covered with aluminium foil and tea towel to keep warm. Leave it to rest for at least 20 minutes. Then cut the lemon up and squeeze the juice over the chicken. Cut chicken min 8 pieces and serve with the juices.
